Deglaze
To loosen drippings from the bottom of a roasting or frying pan by adding wine, stock, or other liquid.
Denerve
To remove the nerve from a piece of meat or poultry.
Devein
To remove the intestinal track of a shrimp, usually with a sharp knife.
Dice
To cut into 1/4-inch pieces.
Dredge
To cover or coat food with flour, cornmeal, or breadcrumbs.
Dry out
To continue cooking drained boiled potatoes or a mixture such as cream puff dough in a saucepan over medium heat to remove excess moisture.
Dust
To sprinkle lightly with flour or sugar.
